I tell my kids poetry is like a song with music...you hear the rhythm in your head.

We did a collaboration with seniors and 8th graders who composed poetry about high school, one with wisdom and one with wonder.

Love the display! it would be fun to do a game where you have students use words in a bag to make a poem.
What about a garden? Poems written by kids attached to a real/fake flower! Delivery to fav Ts or other Ss!
Try limericks. They are like rhyming jokes! Lots of kids who love jokes will be inspired to write limericks.
Use your books and make spine poetry. Ss love to display around the library.

Scholastic Rhyming Dictionary hands on tool for rhyming pattern instruction. Kids get it.

Like to use music as poetry. Introduce lyrics first and then song or vice versa. Bob Dylan, etc. Even young kids stop to listen
For fractions unit "Parts of Me" Ss draw their body in geo shapes, write poem of how many parts of what they love they are.
